Margarita Pizza with Lime Zest

  • For the pizza dough:

    1 cup warm water; 2x1/4 tsp active dry yeast; 2 tbsp olive oil; 3 cups all-purpose flour; 1 tsp salt

    For the pizza toppings:

    1/2 cup tomato sauce; 1/4 cup tequila; 2 cloves garlic, minced; 1 tsp lime zest; 1/4 cup lime juice; 1/4 tsp salt; 1/4 tsp black pepper; 1/4 cup chopped fresh cilantro; 8 oz fresh mozzarella sliced; 1/4 cup grated Parmesan cheese

  • To make the pizza dough: In a large mixing bowl, combine the warm water and yeast. Let sit for 5 minutes, or until the mixture becomes frothy.

    Stir in the olive oil, flour, and salt until a dough forms. Knead the dough on a floured surface for about 5-8 minutes, or until it becomes elastic and smooth.

    Place the dough in a greased bowl, cover it with a towel and let it rise in a warm place for 1-2 hours or until it has doubled in size.

    Preheat your oven to 425F.

    To make the pizza toppings: In a small mixing bowl, combine the tomato sauce, tequila, garlic, lime zest, lime juice, salt and pepper.

    Roll out the pizza dough on a floured surface to the desired thickness.

    Spread the tomato sauce mixture over the dough, leaving a small border around the edge.

    Top the pizza with the fresh mozzarella cheese, Parmesan cheese, and chopped cilantro.

    Bake the pizza for about 15-20 minutes or until the crust is golden brown and the cheese is melted.
